Bakery

The Food-in-Balance Bakery produces loaves of rustic artisan sourdough bread, baked to order in our home kitchen and delivered to doorsteps around Weybridge on selected Saturdays. It also sells Bagels, Swedish Cinnamon buns and a small selection of other freshly baked goods.

We are very excited to have recently teamed up with a lovely little zero waste shop, Ecocentric Us, located at 7, The Parade in Claygate, where you can collect orders on a Monday and select Saturdays

As a social enterprise, a proportion of profits from the bakery are donated to local causes on the Food-in-Balance birthday in June each year. Elmbridge Eco Hub, Weybridge Men’s Shed and Smiles2Smiles were our 2021 beneficiaries. In 2022, Elmbridge Eco Hub, Smiles2Smiles and Weybridge Rowing Club received donations. 

We closed in 2022 when the war in Ukraine broke out, as we hosted a wonderful family of 5 people under the Homes for Ukraine scheme. My customers were incredibly generous helping the family to settle with us, providing them with items for the toddler and baby who was born with us in July 2022. It was a really heart-warming experience We are only now, in 2024, reopening for our next chapter.

About our bread....

Each sourdough loaf is allocated to a customer before the 36-hour hand-crafting process begins. In fact, the entire process from feeding the starter to baking the loaf, is spread over three days. Every loaf is unique and undergoes a long-fermentation process to maximise nutritional benefits. 

Our bread contains only three ingredients – flour, water and sea salt. The levain ('starter') is made purely from flour, water and naturally occurring yeast in the air. It is incredible that these three simple ingredients can magically combine to make such delicious bread. A combination of four different flour types is used in our signature loaf, including white and whole wheat, rye and ancient Khorasan wheat. All flour is sourced directly from Shipton Mill in the Cotswolds.

The gluten free sourdough loaves, made with Shipton Mill gluten free bread flour and organic brown rice flour, contain minimal additional high quality ingredients required to bind the dough in the absence of gluten. Each loaf comes with an ingredients label.

If you decide to order regularly, please purchase a pair of our personalised organic cotton drawstring bread bags. These help reduce waste, assist with delivery and are great for storing your bread. Please contact us if you would like to set up a weekly subscription order for any of our products. The benefit of this is guaranteeing your delivery slot, especially in busy weeks.

We are proud supporters of The Real Bread Campaign, a project of Sustain: the alliance for better food and farming. Our bread matches their definition of 'real' as it contains no additives or chemical leavening agents. Many sourdough breads bought in the shops have additional commercial yeast and other additives added, whereas Food-in-Balance Bakery sourdough is solely leavened with our own sourdough starter.
